Who doesn't like a well-cooked steak? but what's the best way to cook such great meat?
At times you may not feel like going out, but you are craving some tender goodness.
Don't worry there is greatness to be made in your kitchen at home!
First but most important you HAVE to find good meat. This can be easier said than done but if you find a good butcher, and ask them lots of questions you will be sure to find good quality meat.
Note: especially beef from a butcher, it will likely be more expensive to your average grocery store but the quality is drastically better.
What questions to ask...
. Is the beef locally sourced?
. Was it grass-fed?
. Has it been dry-aged for the past 28 days?
Once you have acquired your meat, before cooking, it is best to leave it out of the fridge for up to an hour to get it to room temperature. If your meat is wet make sure to dry it with a paper towel
Cooking time!
As for us over at Jailhouse Grill, we use a charcoal grill. This is something you may not have. But don't fear.
just grab your iron skillet and put it on your stove. It needs to be smoking hot to the point it is too hot for your hand to be anywhere near it.
Place your steak on the pan and leave it for a few moments to build up a nice crust then flip. continue to turn it over every couple of minutes Until it is cooked to the way you like it. Don't forget to sear the edges. If you are cooking multiple steaks make sure not to overcrowd the pan. keep plenty of space between your steaks.
Now, check if your steak is cooked. The preferred method to know that your steak is cooked exactly the way you like it is by using a temperature probe. Place the tip of the temperature probe in the center of the steak. Wait until the temperature of the probe stabilizes before you read it. (Medium rare 55-60 Celsius, Medium 60-65 Celsius, Medium well 70-75 Celsius).
Rest your steak for 5-10 minutes and enjoy.
